MEET THE MAKER: LIZA & JAMES BARBOUR - DILLICIOUS

Meet the Makers behind the products we love and stock at Bellevue Farm Gate. Introducing the first in our series, getting to know the inspirational and talented makers.

James and Liza Barbour are the founders of Dillicious Pickles, a proudly family owned and run business committed to bringing you the best tasting pickles that are Aussie made using premium local ingredients. We're thrilled to be part of their family, as they are part of ours, with our very own Organic Apple Cider Vinegar used in their pickling brine.

WHO THEY ARE
Dillicious is a small food business focused on making dill pickles and brine infused condiments. Committed to creating products made in Australia using premium and simple ingredients with no nasties that make people smile.

Liza and James Barbour live on the Mornington Peninsula with their two kids Elliot and Heidi, and their Groodle - Kirby. Liza is a Dietitian and lecturer at Monash University and James manages Dillicious full-time.

Starting Dillicious as a side-hustle, to Liza and James's surprise and joy, people loved their products so much they've been able to grow into one of Australia's largest producers of dill pickles, supplying retail shops and restaurants Australia-wide.

WHAT THEY MAKE
Aussie made dill pickles and brine infused condiments with no added sugar, gluten free, kosher and vegan certified. All made at their Brinery located in Cheltenham, Victoria.

All of Dillicious products are hand-crafted. Focused on making products of the highest quality using the best ingredients they can get our hands on - Bellevue's organic Apple Cider Vinegar is one of their "not so secret" weapons in the brine.

OH SO SPICY - A fruity and intense spice from habanero chillies, pairs nicely with the potent flavour of fresh horseradish, both delivering a real punch of heat. 

NOT SO SWEET - Subtle sweetness from local flora honey and a little bite from jalapeño chillies for a very untraditional not so sweet pickle.

STRAIGHT UP GARLIC - Aromatic caraway seeds with pungent, purple garlic and just a hint of red chilli flake make for a traditional New York deli-style dill pickle.

WHY THEY DO WHAT THEY DO
It's simple, to make people smile. Their goal is to build a business that does this with their food, while also being responsible to our community and planet.

What’s your favourite apple?
I love Pink Ladys but I can remember eating the most amazing McIntosh apples in Autumn in New England (USA).

What's your favourite apple product?
I love a hot apple cider in Winter, it's the best.

What's your favourite apple dish?
Warm apple pie with vanilla ice cream.

OK it doesn’t have to be apples - what’s your favourite drink?
I'm a big fan of the beers from Mr Banks.
